Your stuff obviously looks amazing! But I'm afraid I don't understand much about how digital art is supposed to be done so I have to ask... Would the middle step just be used as a reference or would some process be used to convert those values into the final colours?

Thank you. The middle step basically serves as the middle layer. When applying color, I add a layer on top of the established values and start blocking in the shapes. That's why I sometimes just leave the middle layer out.
